Hey Guys!
I have missed writing recipes so much but seeing as this is my first recipe for the year I decided to make it special and I think you’re really going to enjoy this one. Is it still safe to say “happy new year”? I guess not but anyway it’s food time! This pasta recipe is a must-try believe me. It’s made with sun-dried tomato pesto and it’s absolutely delicious. Let’s get right into it. Shall we? 
Ingredients:
500g of Penne Pasta
500g of Ground Turkey
1 Large onion
8 Tablespoons of Sun-dried tomato pesto
3 Tablespoons of Olive oil ( 2 + 1 )
1 teaspoon Black pepper
1 teaspoon smoked paprika powder
1 teaspoon Rosemary ( or thyme )
1/2 teaspoon Cayenne pepper ( or to taste )
Salt – 1/2 Tablespoon + 1 Teaspoon (or to taste)
1/2 Cup of Water
Chopped Parsley for garnish ( optional )
Method:
- In a large pot add enough water to boil the pasta and 1/2 Tablespoon salt + 1 Tablespoon of Oil and bring to a boil on high heat.
- Once the water has boiled add the pasta and cook for 10 minutes while covered.
- After 10 minutes check the Pasta to see if it’s cooked. It should be slightly al dente as it would keep cooking in the sauce later. If too firm cook for an additional 2 minutes.
- Once cooked, drain the pasta and set aside.
- Heat up a pot on medium heat and add 2 Tablespoons of Olive oil.
- Chop and add the onions to the heated pan to fry in the oil until the onions turn slightly golden brown.
- Add the ground turkey and fry till for about 7 minutes whilst constantly stirring.
- Add the tomato pesto to the mixture, stir it in and reduce the heat to low.
- Add the salt ( 1 Teaspoon ), black pepper, paprika powder, rosemary and cayenne pepper and stir.
- Add the pasta and 1/2 cup of water the mixture and stir to combine everything.
- Increase the heat to medium-low and cook for 2-3 minutes covered to completely cook the pasta.
- Check for salt and seasoning to your taste, garnish with the chopped parsley and voila your Turkey pesto pasta is ready to be devoured!
