“Save the dry bread” !!! | Coconut french toast recipe

I know! I know! I know!… but here is why:

I know I’ve been gone for too long, and if you guessed “he probably had exams so he had to study” then you are absolutely right! But I’m back like I never left!

Today’s recipe is Coconut french toast. The idea for this recipe came about two years ago while I was studying for my anatomy finals in my friend Alex’s house ( s/o to Alex). It was about 1:30 am, I was so hungry so I asked Alex what was available in his kitchen, he shouted from his room “I think there is bread”. I had seen the bread before I asked him, I just wanted to know if there was anything more promising than the 3-day old dry bread, but there wasn’t. I thought to myself why not make french toast. As I proceeded, I saw some desiccated coconut in a pack then I thought, boom! Coconut french toast!. I had never heard of it before, so for a second I had my “Inventor moment”. After I was done, I was really pleased at how moist the bread had become and how alive it felt again, hence I named this blog post “Save the dry bread”.

Ingredients

6 large slices of bread

250ml of milk

3 eggs

200g of desiccated coconut

20g of Vanilla sugar ( alt: 20g sugar and 1 teaspoon of vanilla extract)

Nutmeg

Butter

Method

Prepare all you will need and set up a work station, this is really important as things can get really messy if you don’t.

Pour the desiccated coconut onto a flat plate, and with a plate the has a little depth eg. a flanging deep plate, add the eggs, milk, vanilla sugar (or sugar and vanilla extract), grate a bit of nutmeg to the mixture and whisk til thoroughly combined.

When making french toast the measurements are not super important, the idea is to get about an equal ratio of eggs to milk and more sugar can be added depending on your taste.

On a low heat, place on a non-stick frying pan to heat up and add a knob of butter to it to melt and get slightly heated.

Dip the bread into the egg mixture and flip it twice, making sure the bread is soaked just right, but not too much.

Place the soaked bread on the bed of desiccated coconut and coat it on all sides.

Fry in the slightly heated pan, toast each side for about 1-2 minutes (depending on how hot your frying pan is) and flip onto the other side.

It is ready when both sides have a lovely dark golden brown and crusty look to it.

Take it out of the pan, let it cool for a bit and Enjoy it while warm.

This can be eaten just by itself, with some fruits and drizzle of maple syrup, with Ice-cream (if that’s how you get down), or even as breakfast with sausages and scrambled eggs… The list is endless. I hope you guys enjoy this one.

This recipe makes for 6 large bread sizes as shown on the Instagram video, so feel free to half the recipe when necessary.
